Ingredients
- 200g mature cheddar, grated
- 3 tbsp ale or beer
- 2 tbsp butter
- 1 tbsp flour
- 1 tsp English mustard
- 1 tsp Worcestershire
- 1 egg yolk
- 4 slices thick bread
- Salt and pepper
Instructions
- Melt butter, stir in flour 1 minute.
- Whisk in ale until smooth.
- Stir in cheese off the heat until melted.
- Beat in mustard, Worcestershire, yolk, salt and pepper.
- Toast the bread on one side under the grill.
- Spread the cheese mixture thickly on the untoasted side.
- Grill until bubbling and golden.
