Ingredients
- 1 shortcrust pastry case (blind-baked)
- 450g golden syrup
- 100g fine breadcrumbs
- Zest of 2 lemons
- Juice of 1 lemon
- 1 egg, beaten
- Pinch of salt
Instructions
- Warm the golden syrup gently.
- Stir in breadcrumbs, lemon zest, juice and salt.
- Pour into the blind-baked pastry case.
- Brush the pastry edges with beaten egg.
- Bake at 180C for 30-35 minutes until set and lightly browned.
- Cool 15 minutes — it sets as it cools.
