Ingredients
- 4 chicken breasts
- 200g spinach, wilted and squeezed
- 100g sun-dried tomatoes, chopped
- 150g mozzarella, sliced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried herbs
- Salt and pepper
- Cocktail sticks
Instructions
- Cut a pocket in each chicken breast.
- Mix the spinach, sun-dried tomato, mozzarella and garlic.
- Stuff each pocket and secure with cocktail sticks.
- Season the outside; brush with olive oil.
- Sear in a hot pan 2 minutes a side.
- Transfer to a 200C oven for 18-20 minutes until cooked through.
- Rest 5 minutes.
