Burmese Shan Khao Swè

Ingredients

  • 300g chicken thigh, sliced
  • 300g flat rice noodles, cooked
  • 2 tomatoes, chopped
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 thumb ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1.2 litres chicken stock
  • 3 tbsp peanut oil
  • 60g roasted peanuts, crushed
  • Pickled mustard greens to top
  • Spring onion, coriander, lime

Instructions

  1. Heat oil; soften onion, garlic and ginger.
  2. Add chicken; brown.
  3. Add tomato, turmeric and paprika; cook 5 min.
  4. Add stock; simmer 25 min.
  5. Mash some of the tomato into the broth.
  6. Place noodles in bowls; ladle broth and chicken.
  7. Top with crushed peanuts, pickled greens, spring onion and coriander.
  8. Squeeze of lime at the table.

  • Peanuts at the end are essential.
