Indian Sambar

Ingredients

  • 1 cup toor dal, cooked
  • 2 cups vegetables (drumsticks, aubergine, courgette, carrot)
  • 2 tomatoes
  • 2 tbsp tamarind paste
  • 2 tbsp sambar powder
  • 1 tsp turmeric
  • For tarka: 3 tbsp oil, 1 tsp mustard seeds, 1 tsp cumin seeds, 10 curry leaves, 2 dried red chillies, 1 tsp asafoetida
  • Salt

Instructions

  1. Cook the dal until very soft; whisk smooth.
  2. Cook the vegetables in 750ml water with tomato, tamarind, sambar powder, turmeric and salt for 15 min.
  3. Add the dal; simmer 5 min more.
  4. Heat oil for tarka; pop mustard seeds; add cumin, curry leaves, chillies and asafoetida.
  5. Pour over the sambar.
  6. Top with coriander.
