Chinese Salt and Pepper Squid

Crispy fried squid tossed with chilli, garlic, salt and Sichuan pepper — Cantonese seafood at its most addictive.

Ingredients

  • 500g squid, cleaned and scored
  • 100g cornflour
  • 2 tbsp flour
  • 1 tbsp Sichuan peppercorns, toasted and ground
  • 1 tbsp salt
  • 3 red chillies, sliced
  • 5 garlic cloves, chopped
  • 3 spring onions
  • Oil for frying
  • Lime wedges

Instructions

  1. Mix cornflour, flour, half the salt and half the ground pepper.
  2. Pat squid very dry; toss in the dry mix.
  3. Deep-fry in 180C oil for 1-2 minutes until just crispy and golden; drain.
  4. Stir-fry chilli, garlic and spring onion in 1 tbsp oil for 30 seconds.
  5. Toss in the squid and remaining salt and pepper.
  6. Serve with lime.
