Italian Pizza Bianca

Ingredients

  • For dough (per pizza): 200g 00 flour, 130ml water, 1g instant yeast, 4g salt
  • For topping: 100g fresh mozzarella, torn; 100g ricotta; 1 garlic clove, sliced; rosemary; olive oil; flaky salt

Instructions

  1. Mix dough; knead 8 min; rest overnight or 12 hours.
  2. Divide and shape into balls; rest 2 hours more.
  3. Preheat oven and pizza stone to maximum (260C) for 45 min.
  4. Hand-stretch dough into a thin disc.
  5. Top with torn mozzarella, dollops of ricotta, slivers of garlic and rosemary.
  6. Drizzle with olive oil; sprinkle flaky salt.
  7. Bake 6-10 min until crust is puffed and charred.
