Ingredients

  • 400g pork mince (or chicken)
  • 6 Thai bird's eye chillies
  • 6 garlic cloves
  • For sauce: 2 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp dark soy, 1 tsp sugar
  • Big handful Thai holy basil
  • 3 tbsp oil
  • 2 fried eggs
  • Steamed rice

Instructions

  1. Pound chillies and garlic to a rough paste.
  2. Heat oil very hot in a wok.
  3. Fry the chilli-garlic paste 30 sec.
  4. Add mince; break up; stir-fry 3 min over high heat.
  5. Add the sauce; toss 1 min.
  6. Off the heat, tip in the holy basil; toss until wilted.
  7. Plate over rice; top with a sunny-side egg.

  • Holy basil (kaprao) — Thai shops; sweet Italian basil is not the same.
  • Crispy egg on top is essential.

Serving suggestions

  • Eat with the runny egg yolk.
