Chinese Mushroom Lo Mein

Soft Chinese egg noodles tossed with mushrooms, garlic and a glossy soy-sesame sauce — restaurant-style at home in 15 minutes.

Ingredients

  • 300g fresh egg noodles
  • 300g mixed mushrooms, sliced
  • 3 garlic cloves
  • 1 thumb ginger
  • 2 spring onions
  • For sauce: 3 tbsp soy sauce, 1 tbsp dark soy, 1 tbsp oyster sauce, 1 tbsp sesame oil, 1 tsp sugar, 100ml stock
  • 3 tbsp oil

Instructions

  1. Cook noodles per packet; drain.
  2. Heat oil in a wok very hot.
  3. Stir-fry mushrooms until they release water and start to brown, 5 minutes.
  4. Add garlic and ginger.
  5. Add noodles and sauce; toss 2 minutes over high heat until glossy.
  6. Top with spring onion.
