Dominican Mangu

Dominican mashed plantains with red onion, cheese, fried salami and egg — the iconic Dominican breakfast.

Ingredients

  • 4 green plantains, peeled and chunked
  • 30g butter
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 2 tbsp vinegar
  • 3 fried eggs
  • 150g salami, sliced and fried
  • 100g white cheese (queso de freir), pan-fried
  • Salt

Instructions

  1. Boil the plantains in salted water 20 min until soft.
  2. Drain; mash with butter and 100ml of the cooking water until creamy.
  3. Sauté the red onion in olive oil with a splash of vinegar — should be slightly pickled-tasting.
  4. Pile mangu on plates.
  5. Top with onion.
  6. Serve alongside fried eggs, fried salami and fried cheese — "los tres golpes" (the three hits).
