Ingredients

  • 2 cans red kidney beans
  • 1 can coconut milk
  • 2 onions chopped
  • 3 garlic
  • 1 thumb ginger
  • 3 tomatoes chopped
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 green chilli
  • 3 tbsp oil
  • Salt
  • Coriander

Instructions

  1. Cook onion in oil 8 min.
  2. Add ginger, garlic, chilli and spices.
  3. Add tomato; cook until thick.
  4. Add beans, coconut milk and 200ml water.
  5. Simmer 25 min; mash some beans for body.
  6. Top with coriander.
