Turkish Karnıyarık

Aubergines split open and stuffed with spiced minced beef, slow-baked in tomato — Turkey's most-loved aubergine dish.

Ingredients

  • 4 small aubergines
  • 500g beef mince
  • 2 onions, chopped
  • 4 garlic cloves
  • 3 tomatoes (1 chopped, 2 sliced)
  • Big handful parsley
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp cumin
  • 3 tbsp oil
  • For sauce: 1 can chopped tomatoes, 100ml water, 1 tsp salt

Instructions

  1. Peel aubergines in stripes; pre-fry whole in oil 10 min until just softening; lift out.
  2. Brown mince with onion and garlic; add chopped tomato, tomato paste, paprika and cumin.
  3. Slit each aubergine lengthways; gently open up.
  4. Stuff with the mince mixture.
  5. Top each with a tomato slice.
  6. Place in a baking dish; pour over the sauce.
  7. Bake at 180C for 40-45 min.

  • Pre-frying aubergines softens them properly.
  • Don't cut the aubergines fully through.

Serving suggestions

  • Eat with rice and yoghurt.
