British Eggs Benedict

Ingredients

  • 2 English muffins, split and toasted
  • 4 slices ham
  • 4 eggs
  • 1 tsp white vinegar
  • For hollandaise: 3 egg yolks, 1 tbsp lemon juice, 150g butter melted, pinch cayenne, salt
  • Chives to top

Instructions

  1. Make hollandaise: whisk yolks with lemon juice and 1 tbsp water over a bain-marie until pale and thick.
  2. Slowly drizzle in warm butter while whisking — should emulsify.
  3. Season with salt and cayenne.
  4. Poach eggs in barely simmering water with vinegar for 3 min.
  5. Top toasted muffins with ham, then poached egg, then hollandaise.
  6. Top with chives.
