French Croque Madame

Ingredients

  • 4 slices country bread
  • 4 slices good ham
  • 100g gruyere, grated
  • For béchamel: 30g butter, 30g flour, 300ml milk, pinch nutmeg
  • 1 tsp Dijon mustard
  • 2 eggs
  • 2 tbsp butter for frying

Instructions

  1. Make thick béchamel.
  2. Spread mustard on 2 bread slices.
  3. Layer ham and gruyere; close with other slice.
  4. Spread béchamel on top.
  5. Top with more gruyere.
  6. Grill until bubbling and deep golden.
  7. Meanwhile, fry the eggs sunny-side up.
  8. Top each sandwich with an egg.
