Ingredients

  • 200g yellow corn meal
  • 15 okra, sliced
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 tsp thyme
  • 30g butter
  • 1 litre stock
  • Salt
  • For fish: 4 white fish fillets (snapper, sea bass), 2 tomatoes, 1 onion, 1 sweet pepper, 4 garlic, 1 Scotch bonnet, 2 tbsp tomato paste, lime, salt

Instructions

  1. Bring stock to a boil; add okra, onion, garlic, thyme, salt.
  2. Simmer 8 min until okra is soft.
  3. Whisk in corn meal in a steady stream.
  4. Cook stirring constantly until thick and pulling away from sides, 15 min.
  5. Stir in butter.
  6. Tip onto a wet plate; shape into a mound.
  7. Make fish sauce: brown garlic, onion, pepper, Scotch bonnet; add tomato paste, tomatoes; simmer 10 min.
  8. Add fish; cook 8 min.
  9. Serve fish over cou cou.
