Chocolate Mousse

A light, airy chocolate mousse with a deep cocoa flavour — an elegant dessert from just a few ingredients.

Ingredients

  • 200g dark chocolate
  • 3 eggs, separated
  • 2 tbsp sugar
  • 200ml double cream
  • Pinch of salt

Instructions

  1. Melt the chocolate gently and cool slightly.
  2. Beat in the egg yolks.
  3. Whip the cream to soft peaks and fold in.
  4. Whisk the egg whites with the sugar to stiff peaks and fold in gently.
  5. Spoon into glasses and chill at least 2 hours.
