Ingredients

  • 600g chicken thigh, cubed
  • 2 onions, sliced
  • 2 peppers (mixed colours), sliced
  • 4 green chillies, slit
  • 1 tbsp ginger-garlic paste
  • 3 tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 tbsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tbsp garam masala
  • 1 tbsp white vinegar
  • 4 tbsp oil
  • Coriander to top
  • Salt

Instructions

  1. Heat oil in a wide pan; brown chicken.
  2. Add ginger-garlic and dry spices; cook 2 min.
  3. Add tomato paste; cook 3 min.
  4. Add chopped tomato; cook until oil separates.
  5. Add onion, peppers, green chillies; toss 5 min — should stay crunchy.
  6. Add vinegar.
  7. Finish with garam masala and coriander.
