Vietnamese Bo Kho

A fragrant Vietnamese beef stew with lemongrass, star anise, ginger and tomato — eaten with crusty French bread or rice noodles.

Ingredients

  • 1kg beef chuck or shank, cubed
  • For marinade: 2 stalks lemongrass minced, 3 tbsp fish sauce, 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tbsp annatto powder (or paprika)
  • 2 onions, sliced
  • 5 garlic cloves
  • 1 thumb ginger
  • 3 tomatoes, chopped
  • 3 tbsp tomato paste
  • 3 star anise
  • 1 cinnamon stick
  • 3 carrots, chunked
  • 1 litre stock
  • 4 tbsp oil
  • Coriander, Thai basil, lime, French bread to serve

Instructions

  1. Marinate beef 30 min.
  2. Brown beef in oil.
  3. Add onion, garlic, ginger; cook 5 min.
  4. Add tomato paste and tomatoes.
  5. Add stock and whole spices.
  6. Simmer covered 90 min.
  7. Add carrot; cook 25 min more.
  8. Serve with French bread (banh mi style) or rice noodles.
  9. Top with herbs and lime.
