Chinese Beef Chow Fun

Ingredients

  • 400g fresh wide rice noodles (or 200g dried, soaked)
  • 300g beef sirloin, thinly sliced
  • For marinade: 1 tbsp soy, 1 tbsp Shaoxing wine, 1 tbsp cornflour
  • 3 cups beansprouts
  • 3 spring onions
  • 2 garlic cloves
  • For sauce: 2 tbsp dark soy, 2 tbsp light soy, 1 tsp sugar, 1 tsp sesame oil
  • 3 tbsp oil
  • Salt and pepper

Instructions

  1. Marinate beef 15 min.
  2. Heat oil very hot in a wok.
  3. Stir-fry beef briefly; lift out.
  4. Add garlic; stir-fry.
  5. Tip in the noodles; toss without too much disturbance to develop char.
  6. Add the sauce; toss.
  7. Return beef; add beansprouts and spring onion; toss 30 sec.
  8. Plate.

Tara’s tips

  • Wok must be very hot — gives the "wok hei" smoky flavour.
  • Don't over-toss noodles — they should catch char.
