Indian Aloo Methi

Ingredients

  • 500g potatoes, cubed
  • 2 cups fresh methi (or 4 tbsp kasuri methi)
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 thumb ginger
  • 2 green chillies
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • 3 tbsp oil
  • Salt

Instructions

  1. Boil potatoes until just tender.
  2. Heat oil; temper cumin.
  3. Add onion; cook 5 min.
  4. Add ginger, garlic, chillies and ground spices.
  5. Add potatoes; toss to coat.
  6. Add methi; stir-fry 5 min until just wilted.
  7. Finish with garam masala.
